Avanzare, is a restaurant created from chef Roger Lenzi in Vero Beach."We modeled it after a Tuscan steak and chop house," said Lenzi. Avanzare buys organic Angus beef from Harris Ranch. "They were one of the early suppliers to raise cattle with no steroids and no antibiotics." Similarly, the pork is organic from White Marble Farms, he said. "When we prepare a pork chop, it's nice and juicy and tastes like pork."
Lenzi chooses suppliers that are picky about their products. San Marzano tomatoes, imported from Italy, are the base for Avanzare's homemade pasta sauces. "We've researched our recipes," he said. "Everything tastes better when they are prepared with the freshest ingredients," the way things tasted years ago when everyone cared about food quality, he said.
